What Are Mycotoxins?
Mycotoxins are naturally occurring compounds produced by mould, especially when coffee beans are poorly stored or processed. The most talked-about in coffee is ochratoxin A. However, modern sourcing, storage, and roasting practices reduce its presence, and strict regulations keep levels well within safe limits.
Is Instant Coffee Really 4× Worse?
Not exactly.
Some studies suggest that instant coffee can contain slightly more mycotoxins than roasted ground coffee — but not four times more. And importantly, most commercial coffee products test well below legal safety limits.
For example, in the EU:
- Instant coffee: 5 μg/kg limit for ochratoxin A
- Roasted coffee: 3 μg/kg limit
These levels are already low, and most trusted brands — instant or not — stay well under them.
